Sandra Cabot’s Liver Cleansing Diet Soup:- Leek & Lentil Soup a la Florentine:-
250g red lentils
2 teaspoons salt reduced soy sauce
1 TBS Basil
1 TSP Oregano
1 TBS Olive Oil
1 large leek (the white part only) chopped
2 carrots chopped
2 cups broccoli chopped
1.5 litres water. I used vegetable broth by Campbells. And did not use this much. I accidently used 1.5 cups and ended up adding another cup!
Gently fry lentils, soy sauce, basil and oregano in the oil, stirring frequently
Add chopped veges. Slightly fry.
Add water (or broth) and simmer for 1 hour, adding water if required.
The recipe says you can put in the blender if you want to change it up a bit. I didn’t do that, and absolutely loved this recipe!
