I was thinking about meals I’d like to plan for the week using food I have in my cupboard:-
- Black Eyed Beans with Rice and melted cheese. Steamed veges on side. (So american!)
- Mini Pizzas? Flatbread with mushroom/cheese/spinach/tomatoes etc
- Roasted Sweet potato with Rosemary from the garden
- Blueberry Muffins
- Chili con carne sauce using turkey mince. I like to eat this with roast potatoes and melted cheese and sour cream. (this week is sounding more American!)
- Rice Salad using brown rice, tuna, broccoli, feta and some lemon juice.
Not a bad plan!
