I had a cooking session on Sunday and made this Martha Stewart Chickpea Butternut Squash Stew (Curry). It looks just like in the picture. The only difference is that I halved the recipe but still used one whole tin of crushed tomatoes. Very good! The pumpkin and carrots make this spicy vegetarian curry a little sweet. I will be making this again! Healthy, filling and tasty! A good lunch.
