Chickpea pancakes rock

Today I made a chickpea pancake for lunch. It doesn’t look like much, but boy was it good! I ate it with smoked salmon. Recipe adapted from Oh She Glows:

1/2 cup chickpea flour

1/4 teaspoon baking powder

1/4 teaspoon garlic powder


1/2 cup water plus 2tbs

Chopped spring onion, grated zucchini, grated carrot

Method: mix dry ingredients with water. Whisk well.

oil hot pan and fry veggies for 1 minute. Put in pancake mixture and settled into a pancake shape. Cook on a low heat until brown on both sides.
I ate this with smoked tuna and folded like an omelet. So good!
